December 20, 2017Imagine Christmas cookies paired with hot chocolate, perfect for a cozy Christmas morning, right? Nothing says holidays like homemade sweet treats that easily bring back childhood memories.
Take your cue from Nourish By Nature and bond with the people dear to you by whipping up something in the kitchen!
Plus points that they’re gluten-free and vegan-friendly.
Christmas Cookies
Ingredients:
¼ Cup Soft brown sugar
¼ Cup Coconut cream
½ tsp Vanilla
1 Tbsp Coconut oil
¼ Cup Almond flour
½ Cup White rice flour
½ Cup Desiccated coconut
2 Tbsp Tapioca starch
Method:
- In a bowl, whisk together sugar, coconut cream vanilla and coconut oil.
- Then, add all the dry ingredients and mix well until combined.
- Form a ball of dough and rest in the fridge for 10 minutes.
- Roll the dough out to roughly 2mm thick – my cookie cutters are small, the star is 3.5cm in diameter, if you are using bigger shapes, roll your dough little thicker.
- Cut out Christmas shapes with cookie cutters.
- Bake in oven on 160°C, 8 to 10 minutes. The time will vary, depending on the size of your cookies.
- Let the cookies cool down before decorating.
*Decorating suggestions
- Sandwich the two cookies together with jam.
- Drizzle with melted chocolate.
- Half-dip in melted chocolate.
